Complex Food Preparation Recipes

This file contains recipes that are in HACCP Process #3:  Complex Foods.  Foods prepared in advance for the next day service or foods that are cooked, cooled, and served the same day are defined as a complex food preparation process.  These foods pass through the temperature danger zone (41°F to 140°F) more than one time.
